He planted majorly autochthonous grapes varietals: Barbera, Timorasso, Albarossa; and he takes care of all the surroundings: starting from the bushes around the vines, to the local animal species which lives in the vineyards and in the around wilderness, and of course, farming organic. He tries to protect and encourage biodiversity.
He defines himself “Natural Producer” because he respects the terroir, he observes and listens to nature carefully, he chooses the vinification that better underlines the characteristic of the grape varietals, bringing their potential to the limit, always careful to respect the balance in nature. That’s why He uses only spontaneous fermentation with indigenous yeast and time is its best ally.

I Carpini was born in 1998 when Paolo decided to change his life, leaving the frenetic Milan lifestyle to find a place where he could create and live an holistic environment where to grow vines and produce unique wines. He moved to Colli Tortonesi, located in South of Piedmont, facing the Cinque Terre sea, and 1 hour drive from Milan.

100% Timorasso, brilliant straw yellow color, apple and chamomile fragrance with a hint of petrol note, mineral with a scent of nuts at medium palate, nice minerality on the finish. It is an explosion of flavor on the palate and nose. Pair excellent with any creamy-buttery food, lobster, salmon, cod, and cheeses.
Timorasso fermented and aged in ceramic amphora (clyvers).
Light Orange color, ripe apricot, apple and chamomile, with a petrol and mineral scent on the nose, follow onto the palate with a well-integrated complexity.
100% Barbera, harvest when very ripe, fermented with indigenous yeast, ages in stainless steel for 5 years Nice deep red ruby color, red fruit fragrance on the nose and palate with some spices, smooth and pleasant.
Barbera from vines planted in 1926. Ages in old big oak barrels for 3 years to soften the tannins, and then 3 years in stainless steel and 3 years in the bottle. Nice complexity with long lasting elegance.
100% Albarossa, it is considered a Piedmont indigenous grape varietal, even if it is the result of a cross between Nebbiolo and Barbera made in 1938. Deep red ruby color, tobacco, cocoa and black berries on the nose, full body with smooth tannins and a voluptuous finish.
Cabernet Sauvignon was planted on the borders between the vines and the bushes to provide food for the bushes’s inhabitants, only in 2011 and in 2018 has been vinified. In both the atypical vintages the Cabernet was able to over ripe on the plant. Deep red color, opulent dark fruits on the nose. A full body wine with an impeccable silky smooth seductive finish.
